Question: How far in advance can I make cream puff shells?
I am going on a short journey and have been asked to bring an appetizer, I would like to make cream puffs and take a filling with me to use the following day. If I can make the cream puffs several days ahead how would I store them?

Answer: Cream puff shells can be made several days in advance and stored at room temperature. After baking the puffs, make a small hole in the side with a skewer. This will allow the hot air to escape and will keep the puffs from getting soggy as they cool. Once they are completely cooled store them in an air tight container. Don't refrigerate.
You can also successfully freeze the cooled and wrapped puffs, but I wouldn't bother in your case. Frozen puffs can be quickly thawed and made crispy by placing them in a 425°F oven for a few minutes.
